In a food processor, add bananas, coconut cream, and pandan powder. Blend until smooth, then stir in goji berries.
Transfer to popsicle molds and freeze for 3+ hours to set. Let thaw for 5 minutes before serving.
*For a subtle "gradient" look, I first added part of the ice cream mixture to the popsicle mold. Then, I added more pandan powder to the remaining mixture before adding it to the mold.
