dry brown lentils

soaked for 2+ hours

coconut milk
salt, pepper, and lemon juice
Instructions
In a large pot, heat the coconut oil and saute the onion, garlic, and ginger until fragrant.
Mix in the curry paste, ground coriander, lentils, and water. Cover the pot for 5 minutes, then add in the veggies and coconut milk.
Cover the pot again, simmering for 7-8 mins until vegetables are tender. Season with lemon juice, salt, and pepper to taste. Serve warm.
