No-bake peanut butter tart (vegan, GF, oil-free)

Vegan peanut butter tart with a chocolate crust. No baking is required for this easy dessert!

Ingredients
  

Crust

  • 2 GoMacro bars | double chocolate + peanut butter chip*
  • 1 1/4 cup rolled oats | 100g
  • 2 tbsp cocoa powder | 10g
  • 3 tbsp creamy peanut butter | 45g
  • 2 tbsp maple syrup | 30g; or liquid sweetener of your choice

Filling

Instructions

  • In a food processor, combine all crust ingredients and blend into a slightly sticky, homogeneous mixture. If the mixture is too dry, add in one tablespoon of water at a time until the crumbs can stick together.
  • Transfer the mixture to a tart pan and press evenly into the edges. Set aside.
  • Meanwhile, add the milk(s) and maple syrup into a saucepan. Bring to a boil, then reduce the heat and simmer while whisking in the peanut butter, vanilla extract, and agar-agar.
  • Once thoroughly incorporated, remove from heat and let the mixture cool slightly before pouring into the crust.
  • Place the tart into the fridge to set for 3+ hours, then slice and serve.

Notes

*If you do not have GoMacro bars on hand, you may substitute with 1 cup (80g) rolled oats, 2 tablespoons (30g) peanut butter, 1 tablespoon (5g), and 1-2 tablespoons (15-30g) maple syrup.
