1/3cupmaple syrup | 80g; or another liquid sweetener
1/4cupapplesauce | 50g
2cupsall-purpose flour | 240g*
1 1/2tspbaking powder
1/2tspbaking soda
1tspcinnamon | or to taste; and/or spices of your choice
1/8tspsea salt
1medium apple | about 180g; peeled and diced into small pieces
Instructions
Preheat the oven to 350F / 180C and grease a cake pan. (I used an 18 cm springform bundt pan.)
In a bowl, whisk together the wet ingredients: oil, milk, maple syrup, and applesauce. Once combined, sift in the flour, baking powder, baking soda, (optional) cinnamon + spices, and salt.
Toss the apple pieces into the same bowl, then fold the mixture with a spatula until combined.
Transfer the batter into the cake pan and bake for 45-50 minutes, or until an inserted toothpick comes out clean. Let cool in the pan for 5 minutes before transferring to a wire rack.
For an extra touch, free to add some sugar glaze or chocolate to the cake.
Notes
*I have tested this recipe replacing up to 1 cup of all-purpose flour with GF flour. You may also use 2 cups of whole-wheat flour (or any ratio of whole-wheat and all-purpose).
