Veggie & lentil green curry (vegan, one-pot, GF)

Veggie-packed green curry

This green curry is loaded with veggies and legumes! It's simple to make and super versatile.

Ingredients
  

  • 1 tbsp coconut oil | or another cooking oil of choice
  • 1 large onion | diced
  • 4 cloves garlic | minced
  • 1 tbsp ginger root | minced
  • 1/2 tsp ground coriander
  • 3 tbsp green curry paste
  • 3/4 cup dry brown lentils | soaked for 2+ hours
  • 1 cup water
  • 4 cups chopped veggies
  • 1 14-oz can coconut milk
  • salt, pepper, and lemon juice

Instructions

  • In a large pot, heat the coconut oil and saute the onion, garlic, and ginger until fragrant.
  • Mix in the curry paste, ground coriander, lentils, and water. Cover the pot for 5 minutes, then add in the veggies and coconut milk.
  • Cover the pot again, simmering for 7-8 mins until vegetables are tender. Season with lemon juice, salt, and pepper to taste. Serve warm.
