Veggie-packed green curry
This green curry is loaded with veggies and legumes! It's simple to make and super versatile.
Ingredients
- 1 tbsp coconut oil | or another cooking oil of choice
- 1 large onion | diced
- 4 cloves garlic | minced
- 1 tbsp ginger root | minced
- 1/2 tsp ground coriander
- 3 tbsp green curry paste
- 3/4 cup dry brown lentils | soaked for 2+ hours
- 1 cup water
- 4 cups chopped veggies
- 1 14-oz can coconut milk
- salt, pepper, and lemon juice
Instructions
- In a large pot, heat the coconut oil and saute the onion, garlic, and ginger until fragrant.
- Mix in the curry paste, ground coriander, lentils, and water. Cover the pot for 5 minutes, then add in the veggies and coconut milk.
- Cover the pot again, simmering for 7-8 mins until vegetables are tender. Season with lemon juice, salt, and pepper to taste. Serve warm.
