Banana ‘nice cream’ combined with fragrant pandan and goji berries — these refreshing popsicles are the perfect treat for hot days.
Many of you probably know the healthy ice cream hack: ‘nice cream’ made with blended up frozen bananas. As a die-hard nice cream fan, I love spicing it up with different ingredients and flavors.
These popsicles are one such variation, made with the addition of pandan, coconut cream, and goji. They have quite a wonderful and unique fragrance and color!
If you don’t have pandan powder, feel free to use matcha powder instead; about 2 teaspoons or to taste.
Goji berries are also an optional mix-in. If you omit them, you just won’t have the nice “surprise element” (like biting into a chocolate chip in a cookie).
I used a silicone ice cream mold to make these popsicles. Also, my matcha powder, pandan powder, and goji berries are from Suncore Foods (code: vegamelonSF15). 🙂
Pandan & goji berry ice cream popsicles (vegan, GF)
Ingredients
- 3 frozen bananas | large
- 3/4 cup coconut cream
- 4 tsp pandan powder | or 2 tsp matcha powder
- 3 tbsp goji berries
Instructions
- In a food processor, add bananas, coconut cream, and pandan powder. Blend until smooth, then stir in goji berries.
- Transfer to popsicle molds and freeze for 3+ hours to set. Let thaw for 5 minutes before serving.
- *For a subtle "gradient" look, I first added part of the ice cream mixture to the popsicle mold. Then, I added more pandan powder to the remaining mixture before adding it to the mold.
